Chicken & Veggie Pita Pizza is my favorite lunch. It’s good and good for ya!
I use homemade pizza sauce and pitas. These pizzas are very easy to make, especially if you cut all your veggies up at the beginning of the week, then you can just grab them as you need them.
The girls aren’t so fond of the veggies on their pizzas, so we made a couple of cheese only pizzas for them.
Brian & I eat these for lunch at least twice a week and never get sick of them. You can switch the veggies up to your liking.
Chicken Pita Pizza
1 whole wheat pita bread
chicken breast strips or pieces (cooked)
sliced zucchini or yellow squash (about 5 thin slices)
1/4 C. diced bell pepper
Preheat oven to 350. Place pitas in oven til crisp, then remove.
Warm chicken in skillet with a little olive oil.
Top pitas with sauce, veggies, chicken & cheese.
Place back in oven until cheese is bubbly.
